I decided to make a little treat for the kiddos for St. Patricks Day and it occurred to me that Rice Krispy treats are already yellow and would make a great base for pots of gold.

Rice Krispie treats in cupcake liners

I went searching for gold cupcake liners, edible gold coin confetti and Air Head Extremes on Amazon. I was ready. You can find the confetti here, Air Heads Xtremes here and the cupcake liners here.

Airheads Extremes make great rainbows

I used the recipe on back of the box of cereal. I would recommend using more marshmallows and possibly more butter than is called for. Mine were pretty crunchy. I also added yellow food coloring into the melted marshmallows/butter before adding the cereal. I then patted the mixture into the cupcake liners that I had in a cupcake pan. It made about 3 dozen. *UPDATE* I found this recipe that makes the best Rice Krispie treats! You can find that link here.

While the St. Patrick’s Day gold pots were still warm I topped them off with the gold candy and tucked the Airheads Extremes down into the sides. I love how it looks like a rainbow over a pot of gold. Super easy! The kids enjoyed the treat and it was fun to leave them as surprises on the neighbors’ doorsteps. Who could you share these with?
